Many dishes are cooked low temperature in regulated water baths, fish and meat is vacuum packed with aromatics and slow cooked to retain each ingredients succulence and integrity. This technique is used by the world’s greatest restaurants including El Bulli, The Fat Duck, and Gordon Ramsay.

Meat is locally sourced from small suppliers, seafood is wild or organic.
You are free to bring your own wine and there is no corkage charge, water is available free of charge at your request.
